100% EXTRA VIRGIN ITALIAN OLIVE OIL
European legislation (EEC Regulation No. 2568/91 and subsequent updates) has determined the minimum quality standards that olive oil must present in order to be marketed with the words “Extra Virgin Olive Oil”. The oil must be obtained by extraction using cold mechanical methods only, ie at controlled temperatures by law below 28 degrees celsius.
The acidity of an extra virgin olive oil should never exceed 0.8%.
An Identity Card for extra virgin olive oil has been created in Italy.
